The story
South Indian filter coffee is decoction from a metal percolator, mixed with boiled milk and often a little sugar, hot, strong, and poured until it froths. Chikkamagaluru is where the Indian crop’s origin story is planted; the cup in town is that shade-grown bean made drinkable. The steel pour is cafe craft from the south, not a brand.
